Cabbage and eggs form a simple, fast, and tasty one-pan dish using tender cabbage, fluffy eggs, onion, garlic, and ordinary seasonings.

Ingredients:
1 medium green cabbage, finely shredded
4 large eggs
1 small onion, thinly sliced
2 cloves garlic, minced
2 tablespoons olive oil or vegetable oil
1/2 teaspoon paprika
1/2 teaspoon salt, or to taste
1/4 teaspoon black pepper
1/2 teaspoon Italian seasoning, optional
2 tablespoons fresh parsley, chopped
1 tablespoon butter, optional

Instructions:

  1. Prepare the Vegetables

Take out the cabbage leaves that are damaged and thoroughly rinse the cabbage.

Cut the cabbage into four parts, take out the tough core, and finely shred the leaves.

Cut the onion into thin slices and finely chop the garlic.

  1. Cook the onion and the garlic.

Heat the olive oil in a large skillet over medium heat.

Add the sliced onion and cook it for about 2 to 3 minutes, stirring from time to time, until it starts to soften.

Cook the finely chopped garlic for an additional 30 to 60 seconds until it is fragrant.

Take care that you don’t burn the garlic.

  1. Add the Cabbage

Shred cabbage and then add it to the skillet.

Add salt, black pepper, paprika, and Italian seasoning.

In the case of using red pepper flakes, add them at this point.

Mix all of it using a wooden spoon or spatula.

  1. Cook Until Tender

Cook the cabbage for about 7 to 10 minutes, stirring every few minutes.

The cabbage should tenderize as it develops a few lightly golden, caramelized edges.

If the cabbage appears to be sticking to the pan then add a little water and continue cooking.

To get softer cabbage, cover the skillet for 2 to 3 minutes while you’re cooking it.

  1. Add the Eggs

Create four small spaces in the cabbage mixture.

Put an egg into each space.

Another option is to first mix the eggs in a bowl and then pour them over the cabbage.

Cook the eggs for approximately 30 to 60 seconds, then use a spatula to gently stir and fold them into the cabbage.

  1. Cook the eggs until they are done.

Cook for an additional 2 to 3 minutes, stirring gently until the eggs are completely cooked and fluffy.

When butter is being used, add it in the last minute and then mix all the ingredients gently for added richness.

Don’t overcook the eggs if you want them to stay soft and tender.

  1. Garnish and Serve

Switch off the heat and then gently scatter some freshly chopped parsley onto it.

To give it a bit more flavour, sprinkle in a little bit of red pepper flakes or some freshly cracked black pepper.
