Ingredients:
2 medium zucchini, grated
1 cup sweet corn, fresh or canned and drained
1 large egg
½ cup all-purpose flour
½ cup shredded mozzarella cheese
¼ cup grated Parmesan cheese
2 cloves garlic, minced

½ teaspoon Italian seasoning
½ teaspoon paprika
½ teaspoon salt

2–3 tablespoons olive oil or vegetable oil, for cooking

½ cup sour cream or Greek yogurt
1 tablespoon mayonnaise
1 teaspoon lemon juice
½ teaspoon garlic powder
Pinch of black pepper
1 tablespoon chopped fresh parsley
Instructions:
- Prepare the Zucchini
Cut the zucchini and grate it using the large holes of a box grater.
Put the grated zucchini into a clean kitchen towel or cheesecloth and press down firmly to get as much of the excess water as possible.
