Cozy Crockpot Cabbage Soup

A warm, hearty and comforting slow-cooker soup packed with tender cabbage, vegetables and savory beef. Perfect for a cozy family dinner

Ingredients
  

1 lb (450 g) ground beef
½ large green cabbage, chopped
1 medium onion, diced
3 cloves garlic, minced
2 carrots, sliced
2 celery stalks, sliced
1 can (14.5 oz) diced tomatoes
4 cups beef broth
2 tbsp tomato paste
1 tsp Italian seasoning
1 tsp paprika
½ tsp salt
½ tsp black pepper
1 tbsp Worcestershire sauce
1 bay leaf
1 tbsp olive oil, if needed
2 tbsp fresh parsley, chopped

Method
 

Brown the beef: Cook the ground beef in a skillet over medium heat until browned. Drain excess grease.
    Load the crockpot: Add cabbage, onion, garlic, carrots and celery to the slow cooker.
      Add the beef: Pour the cooked ground beef over the vegetables.
        Add liquids and seasoning: Stir in diced tomatoes, beef broth, tomato paste, Worcestershire sauce, Italian seasoning, paprika, salt, pepper and bay leaf.
          Slow cook: Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the cabbage and vegetables are tender.
            Finish: Remove the bay leaf, taste and adjust seasoning. Sprinkle with fresh parsley and serve hot.
