- Wash the cabbage and slice it finely; slice the spring onions into rings, and finely chop the garlic and ginger.
- Crack the eggs into a small bowl and whisk until the mixture is uniform.
- Heat the olive oil or sesame oil in a large pot over medium heat.
- Add the garlic and ginger and sauté for about 30–60 seconds until fragrant.
- Add the chicken or vegetable broth, soy sauce, salt, black pepper, and (optional) chili flakes.
- Bring the broth to a gentle boil and add the sliced cabbage.
- Reduce the heat and simmer for about 7–10 minutes until the cabbage is tender but still retains a slight crunch.
- Slowly pour the whisked eggs into the simmering soup in a thin, steady stream while gently stirring the soup in one direction with a spoon or chopsticks.
- Let the eggs cook for about 30–60 seconds until fine ribbons of egg form.
- Stir in the spring onions and sesame oil, then taste and adjust seasoning if necessary.
- Ladle the hot soup into bowls and garnish with fresh coriander, extra spring onions, and sesame seeds as desired. Serve hot immediately.
