Perfect as a snack, appetizer, or side dish, these crispy broccoli croquettes have a soft, cheesy interior and a golden, crunchy exterior.

Ingredients:
Two cups of finely chopped broccoli florets
One cup of mozzarella cheese, shredded
Half a cup of breadcrumbs
¼ cup of Parmesan cheese, grated
One huge egg
Two minced garlic cloves
Half a teaspoon of salt
Half a teaspoon of black pepper
Half a teaspoon of Italian seasoning
One-half teaspoon of optional red pepper flakes
One cup of breadcrumbs to coat
Frying with vegetable oil
Instructions:
Cut the broccoli into little florets after washing it.
Bring the broccoli to a boil for two to three minutes, or until it becomes somewhat soft.
After thoroughly draining and allowing it to cool, thinly slice the broccoli. Take off any extra moisture.
To a large mixing basin, add the chopped broccoli.
Add the egg, minced garlic, Parmesan cheese, mozzarella cheese, ½ cup breadcrumbs, Italian seasoning, black pepper, salt, and red pepper flakes.
Combine all ingredients until thoroughly blended.
Form little pieces of the mixture into oval or circular croquettes.
Coat each croquette completely by rolling it in the remaining breadcrumbs.
In a frying pan, heat the vegetable oil over medium heat.
Add the croquettes carefully in small batches, and fry for 3–4 minutes, rotating them occasionally, until they are crispy and golden brown all over.
Tips:
To keep the croquettes from crumbling, make sure the broccoli is thoroughly drained.
Add a few more breadcrumbs if the mixture seems too soft.
Avoid packing the frying pan too full.
Before shaping, insert a tiny cube of mozzarella into each croquette for an extra cheesy core.
