Ingredients

  • 1 large head cauliflower
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • ½ cup grated Parmesan cheese
  • ½ cup shredded mozzarella cheese
  • 1 tsp Italian seasoning
  • ½ tsp paprika
  • ½ tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp fresh parsley chopped
  • 1 tbsp lemon juice optional
  • ¼ tsp red pepper flakes optional

Method

  1. Oven should be preheated to 425°F (220°C) and the large baking sheet should be lined with parchment paper.
  2. Take the outer leaves off the cauliflower but make sure the core remains.
  3. Cut the cauliflower into thick slices, about ¾–1 inch thick, using a sharp knife so that it forms steak-shaped pieces.
  4. Take the olive oil, add the minced garlic, garlic powder, Italian seasoning, paprika, salt, and black pepper to a small bowl and mix them together.
  5. Place the cauliflower steaks on the baking sheet that has been prepared and coat both sides thoroughly with the garlic-seasoned olive oil.
  6. Evenly distribute the Parmesan cheese over the top of each cauliflower steak.
  7. Bake it in the oven which has first been heated for approximately 15 minutes, until the cauli starts to soften and the edges turn golden.
  8. Flip the cauliflower steaks carefully and then roast them for another 7 to 10 minutes.
  9. Cover the tops with mozzarella cheese and put the tray back into the oven.
  10. Bake for an additional 3 to 5 minutes until the mozzarella has melted and is bubbly and the edges are nicely browned.
  11. If you want an extra golden crust, broil it for 1 to 2 minutes making sure that the cheese doesn’t burn.
  12. Take the cauliflower steaks out of the oven and let them rest for 2 to 3 minutes.
  13. Add some fresh parsley and, if you like, a little press of lemon juice and a little bit of red pepper flakes.
  14. Serve it warm and savor the crispy, cheesy garlic-Parmesan topping.
