Ingredients:
Regarding the Chicken
Two skinless, boneless chicken breasts
One and a half tablespoons of Cajun seasoning
One-half teaspoon of paprika
Half a teaspoon of powdered garlic
Half a teaspoon of black pepper
One tablespoon of olive oil
Regarding the Pasta:
8 ounces (225 grams) of fettuccine or penne pasta
One spoonful of butter
Three minced garlic cloves
One cup of heavy cream
Half a cup of chicken broth
1/4 cup of grated Parmesan cheese
Half a teaspoon of Cajun seasoning
One-half teaspoon of paprika
Add salt to taste.
Half a cup of bell peppers, sliced
Two tablespoons of freshly chopped parsley
Guidelines:
- Take ten minutes to cook the pasta.
Heat a big pot of salted water till it boils. Cook the pasta as directed on the package until it’s al dente.
After draining the pasta and setting it aside, put aside about ½ cup of pasta water.
Five minutes to season the chicken
Dry the chicken breasts with a pat. Add black pepper, paprika, garlic powder, and Cajun flavour to both sides. Evenly rub the chicken with the spices.
- Cook the chicken for ten to twelve minutes.
In a big skillet, heat the olive oil over medium-high heat.
Cook the seasoned chicken for 5 to 6 minutes on each side, or until it is cooked through and golden brown.
After moving the chicken to a platter, give it some time to rest. Next, cut it into strips.
- Cook the garlic and peppers for three minutes.
Add the butter and bell pepper slices to the same skillet. Cook for two minutes or so.
Stirring continuously, cook for a further 30 seconds after adding the minced garlic.
5. Spend five minutes making the Cajun Cream Sauce.
Fill the skillet with the heavy cream and chicken broth.
Add paprika and Cajun flavour. After giving the sauce a thorough stir, simmer it gently.
Turn the heat down to low and add the Parmesan cheese little by little. Stir until the sauce is thick and creamy and the cheese has melted.
- Mix the pasta for two to three minutes.
Fill the skillet with the cooked pasta.
Combine all the ingredients and toss until the pasta is fully covered in the smooth Cajun sauce.
Add a tiny bit of the pasta water that was set aside if the sauce gets too thick until you get the right consistency.
7. Complete and Serve: 1 minute
Place the sliced Cajun chicken on top of the creamy spaghetti.
Add more Parmesan cheese and fresh parsley as garnish.
Serve hot and creamy right away.
Practical Advice:
Cook the chicken in the same skillet as the sauce for optimal flavour. The chicken’s delicious browned bits give the Cajun cream sauce more depth.
